About the Recipe
This spooky blueberry pie is a Halloween treat that blends the juicy sweetness of fresh blueberries with a flaky, golden crust. Topped with eerie bat-shaped pastry cutouts, it's both festive and delicious, making it the perfect dessert for your haunted celebration.

Ingredients
Pie Crust
3 cups flour
1 tsp salt
20 tbsp cold unsalted butter (~2 sticks and 4tbsp)
8-10 tbsp cold water
2 tbsp sugar
Filling
4 cups of fresh blueberries
1/3 cup flour
1/3 tbsp cornstarch
2/3 cup of sugar
1 tsp of lemon juice
1 tbsp cut of unsalted butter
Egg Wash
2 tbsp milk
1 egg
Preparation
STEP 1: Begin on the crust first - as it must chill for 1-2 hours in the fridge!
STEP 2: For the dough, sift together your flour, salt, and sugar together in a large bowl. Mix thoroughly.
STEP 3: Cube up your cold butter and add to the dough mixture. Slowly add in the cold water while pinching the butter to incorporate into a dough. It should be a bit flakey and not sticky! Less water is better so integrate it one tablespoon at a time.
STEP 4: Once the dough forms, chill it for 1-2 hours in the fridge (or overnight).
STEP 5: Once the crust is chilled, preheat your oven to 400F. For the filling, mix your blueberries with the flour, cornstarch, sugar, and lemon juice until the berries are fully covered.
STEP 6: Grab your pie dough and cut it as follows: 2/3 for the circle crust, 1/3 for the bats. Using the 2/3 pie crust piece, roll out a circle and add to your 9.5in pie pan as the bottom crust layer. Poke holes with a fork on the bottom layer of crust.
STEP 7: Fill the pan with the prepared blueberry filling.
STEP 8: Roll out the other dough piece out and cut out your bats. Halloween cookie cutters can be found on my Amazon Storefront like I use in this recipe! Decorate the pie as you like with the bat cutouts along with some small cuts of butter. Egg wash the crusts.
STEP 9: Bake at 400F for 20 minutes and then 350F for 50 minutes (until center is bubbling and golden brown). Enjoy!
