Pumpkin Spice Crumbl Copycat Cookies

About the Recipe

If you are looking for a pumpkin spice recipe that bakes into a soft and thick fluffy cookie similar to Crumbl's, this is your recipe!

Ingredients

2 1/4 cup of AP flour

1 tsp corn starch

3/4 tsp baking powder

3/4 tsp baking soda

3/4 tsp salt

1 tsp cinnamon

1/2 tsp pumpkin pie spice

1 tsp all spice

1 tsp of vanilla extract

1 egg + 1 yolk

1/2 cup of butter (room temp)

1 cup of dark brown sugar

1/4 cup of sugar

1/4 cup of olive oil

1 1/4 cup of pumpkin puree

1 can of cream cheese frosting

Preparation

STEP 1: Preheat your oven to 350F.


STEP 2: Begin by sifting together your dry ingredients in a small bowl; flour, cornstarch, baking powder, baking soda, salt, cinnamon, all spice, and pumpkin pie spice.


STEP 3: Then in another bowl, cream together your dark brown sugar, sugar, and butter until creamy. Add the eggs, pumpkin puree, vanilla extract and oil, mix until combined.


SEP 4: Then mix your dry into the wet ingredients. The mixture will be sticky!


STEP 5: Use a icecream scooper to scoop balls of the dough onto a pan lined with parchment paper.


STEP 6: Bake for 15-20min at 350F. Let cool.


STEP 7: Then once your cookies have cooled, swirl on your cream cheese frosting (you can use a plastic baggie to swirl on, just cut off the corner and it will act as a homemade piping bag!).


STEP 8: Sprinkle cinnamon or the pumpkin pie spice on top! Enjoy!
