About the Recipe

Ingredients
Muffin Batter
4 overripe bananas
1 cup of AP flour
1/3 cup salted butter (melted and cooled)
3/4 cup light brown sugar
1 egg
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
2 tsp vanilla extract
1/2 tsp apple cider vinegar
*1/4 cup of chocolate chipsÂ
Banana Whipped Cream
400ml heavy cream
1 1/2 cups of powdered sugar
1-2 tbsp banana pudding mix
Preparation
STEP 1: In a large bowl, mash your bananas up. Add the melted butter, beaten egg, vanilla extract, and apple cider vinegar.
STEP 2: In an another bowl, sift your flour, brown sugar, baking soda, cinnamon, and salt together.
STEP 3: Slowly fold the wet into the dry ingredients until the batter forms. Add the chocolate chips last.
STEP 4: Fill up your lined muffin tin and bake at 375F for about 15-20 minutes.
STEP 5: For the cream, using a mixer, whip the heavy cream, powdered sugar, and banana powder until thick and fluffy. This may take a few minutes, give it time to become fluffy!
STEP 6: Prepare the muffins to be filled with the cream by using a small spoon to take out a piece of the center of the muffin. Leave a small hole to pipe the cream into.
STEP 7: Using a piping bag or plastic bag, pipe the cream into the center of the muffins and some around the top. Enjoy!
