The cutest blueberry tarts that take less than an hour to prep and bake! These are perfect to eat for breakfast and use simple ingredients that you'll find in your pantry!

Ingredients
2 1/2 cup blueberries
1 1/2 tbsp cornstarch
1/4 cup white sugar
1 tbsp lemon zest
1 tsp lemon juice
1 tsp vanilla extract
1 egg (beaten with whisk)
Sprinkle of thyme
Strip of frozen pastry dough
Preparation
Step 1
Mix your blueberries with some cornstarch. Then add your sugar, thyme, lemon zest, lemon juice, and vanilla.
Step 2
Cut your frozen pastry dough into 4 large squares. Fill the center with your blueberry filling. Fold and crinkle the sides around the filling.
Step 3
Egg wash the sides of each pastry.
Step 4
Bake at 400F for 20-25 minutes.
