Ingredients
Batter
2 cups flour
½ tsp salt¾ cup brown sugar½ cup granulated sugar½ tbsp baking powder1 tsp baking soda¼ tsp cinnamon
2 eggs
1 1/2 cup Vanilla Greek Yogurt3/4 cup unsalted butter (melted)1 tsp bourbon vanilla extract1 tsp lemon zest1/2 cup blackberriesÂ
Crumble
3/4 cups flour½ cup brown sugar
1/4 cup unsalted butter (melted)
1 tsp cinnamon
pinch of cardamon
splash of vanilla bourdon extract
Frosting
1/2 cup powdered sugar
4-5 tbsp of milk
Preparation
Step 1
Begin by sifting the flour, salt, sugars, baking powder, baking soda, and cinnamon together.
Step 2
In another bowl, whisk together the eggs, vanilla greek yogurt, and vanilla extract together. Add the melted and cooled butter last.
Step 3
Slowly fold in the wet to dry ingredients until just combined. Add your blackberries after coating them with flour. Leave aside.
Step 4
For the crumble, add together the brown sugar, extract, cinnamon, cardamon, and butter until a crumbly sugar forms.
Step 5
In a greased or lined muffin tin, spoon in the batter. Sprinkle the crumble on top last.
Step 6
Bake at 375F for about 17-20 minutes.
Step 7
While the muffins are baking, prepare the sugar frosting. Combine powdered sugar and milk in a small bowl. Drizzle the frosting on the muffins while warm with a spoon! Enjoy!
